Spring Rolls with shrimps
INGREDIENTS: (for approximately 12 spring rolls)
1 package Country Style Filo pastry KANAKI 650g
500 gr. shelled shrimps
3 green onions
3 large carrots
2 red peppers
4 tbsp. finely chopped parsley
3 egg whites
olive oil for frying
Wash and finely chop the spring onions; grate carrots and courgettes; cut peppers, deseed and finely chop. Sauté all the vegetables in 3-4 tablespoons of olive oil and add the shrimps. Add salt and pepper. Remove from heat, drain off oil and blend with two beaten egg whites and parsley. Prepare the mini rolls as per the instructions. Fry the Spring Rolls in hot oil until golden, drain on paper towel and serve.
For making Spring Rolls:
1. Cut the pastry sheets in half. To make the roll, fold the sheet in half and diagonally place two tablespoons of the filling.
2. Fold the two opposite ends inwards.
3. Roll the sheet up. Brush the edge of the sheet with a little of the remaining egg white, slightly beaten, to stick. Repeat the same with all pastry sheets.
